Europe/UK - Bubble and Squeak
This humble British dish is essentially Sunday roast leftovers: veg and potato scraps are formed into patties and shallow-fried. Its origins go back to the 1800s when it also contained beef, but during World War rationing, the beef was omitted.
It is traditionally eaten on a Monday evening, so it's available at the evening buffet on Mondays in Silk Route.
