Morocco - Tagine
A tagine is a dish named after the conical earthenware pot in which it's cooked. A type of stew usually made with lamb or chicken, it's traditionally cooked over hot coals.
Try one at Agadir, which has a number of regional tagines from Marrakech, the High Atlas mountain range and coastal village Essaouira.
Can't choose? We recommend d'jaj mkali: braised baby chicken is simmered in a sauce made with onions, garlic, ginger, saffron, preserved lemon and olives.
