Schnitzels, or escalopes, became popular in the Middle Ages in northern Italy, what is now Austria. In Austria, schnitzels must legally be made with veal, while in Germany the patties may be made with beef or chicken.
An authentic schnitzel needs to be pounded thin then deep-fried in breadcrumbs, and is usually served with lemon and parsley potato salad. The word schnitzel comes from the German "der schnitz" which means a "slice" or "cut", while "schneider" is the word for "tailor", a cutter of fabric.
