Think of risotto and you probably think of Italy, but a variation known as gamopilafo is a typical dish served at celebrations on the Greek island of Crete. The recipe remains much the same as it was hundreds of years ago.
You can try it at Barocco, a new restaurant, from May 15. Tender strips of lamb are added to white rice, which is flavoured with lamb jus and mushrooms, scented with lemon truffle sauce and garnished with aged Gruyere cheese.
